Your Fruit Is Under Attack. That's Exactly Why It's Good for You. And Why the Peeler in Your Drawer Might Be Undoing It.

Picture a raspberry, still on the vine, in the last weeks before harvest. An insect lands on its skin. The raspberries can't run. It can't fight back the way an animal would. So it does the only thing it can: it manufactures chemical weapons, on the spot, in the part of itself under direct attack, the skin.

This isn't a metaphor. It's basic plant biology, and it's the actual origin story of the molecules we talk about.

Plants under siege make their own defence chemicals

Salvestrols themselves are phytoalexins, part of a plant's own immune system. They're produced primarily on an "if and when needed" basis: a resting plant isn't full of them by default. It's the act of being attacked, usually late in the ripening phase, that switches production on.

And production happens exactly where the attack lands. When a pathogen, most often a fungus, targets a plant, it typically goes for the skin of the fruit or the roots. That's also precisely where the plant produces its Salvestrols in response: at the site of the infection itself, so the molecule can act directly on the invader.

Plants tailors its response to the specific threat, suggesting a plant facing more than one pathogen at once can produce different Salvestrols against each one. If that holds up, it means this isn't one fixed molecule produced on autopilot. It's a responsive system, tuned to whatever the plant is fighting off at the time.

The part you're told to throw away is the part doing the work

This is where it gets uncomfortable, because most of us have been trained by recipes, by habit, by our mothers, to remove exactly the tissue where this defence response is concentrated.

Apple pie. Mashed potatoes. Roast pumpkin. Citrus segments eaten with the pith scraped off. Grape juice pressed and strained, leaving the skins behind as waste. Cucumber peeled "because it's easier to digest." None of these are wrong choices for taste or texture. But each one removes the outer layer and discards it. That’s the same layer the plant used as its chemical front line.

None of this means the flesh is worthless. It isn't, and whole fruit and vegetables remain essential for fibre, water content, vitamins, and dozens of other compounds beyond this one family. But if the goal is specifically to get more of the plant's own defence chemistry, the skin and pith are not the part to discard.

Why this connects back to what we've said about your own cells

But the parallel is worth naming: fungi carry a related enzyme that's what actually converts a Salvestrol into something that acts against the pathogen inside the plant, in much the same way Salvestrols are proposed to work with CYP1B1 in the body. Same underlying chemistry, doing a defensive job in two very different organisms. It's a tidy piece of biology, not a claim that what happens in a plant fighting fungus is a preview of what happens in a person, just a reason the mechanism itself isn't invented from nothing.

What this actually means at the fruit bowl

A few practical shifts, none of them dramatic:

  • Wash and eat the skin on apples, pears, grapes, cucumbers, and stone fruit where you'd normally peel out of habit rather than necessity.
  • Leave more pith on citrus than you're used to, rather than segmenting it away completely.
  • If you're juicing or blending, consider whether the skins need to come out at all.
  • Choose fruit that's been allowed to ripen rather than picked hard and green, since, as above, the molecule accumulates through ripening, not before it.

This won't get you back to some pre-industrial baseline of plant chemistry. That's a bigger conversation about farming practices than a peeling habit can solve. But it's a genuinely different lever than "eat organic" or "buy local," and it's one entirely within your control at home, regardless of where the produce came from.
